Calamarata with Fresh Salmon and Peas in a Light Vodka Pink Sauce

Ingredients

Instructions

  1. Cook pasta as directed on package
  2. While pasta is cooking prepare the sauce
  3. In a medium frying pan add 2 Tbs EVOO and heat over medium heat
  4. Add 2 Tbs Shallots and Garlic, sauté 1 minute
  5. Add Peas, sauté 1 minute
  6. Add 1/3 cup Water, cook 5-6 minutes
  7. Add 1 Tbs Parsley, remove from heat and set aside
  8. In a separate frying pan add 2 Tbs EVOO and heat over medium heat
  9. Add Shallots, sauté 1 minute
  10. Add Salmon, turn heat to high
  11. Add pinch of Salt and Pepper, saute 2-3 minutes
  12. Add Vodka and sauté 1-2 minutes
  13. Add Crushed Tomatoes and Peas
  14. Turn heat down to medium and simmer 5-6 minutes
  15. Add Cream, heat 1-2 minutes
  16. Taste and adjust with Salt and Pepper to your liking
  17. Add 1 Tbs Parsley
  18. Combine contents from both frying pans and cooked pasta
  19. Toss and serve immediately
