Mediterranean Bow Tie Pasta Salad

Ingredients
- 500 grams Bow Tie Pasta
- 3 – 4 Tbs Sea Salt (for the water the pasta cooks in)
- 1 medium Red Onion julienned
- 200 grams Feta Cheese, diced or crumbled
- 1 cup pitted Kalamata Olives
- 1 cup halved Grape Tomatoes
- 1/2 cup chopped fresh Italian Parsley
- 1/2 cup chopped fresh Mint
- 2 Tbs + 1/2 cup (divided) EVOO (extra virgin olive oil)
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
Instructions
- Fill a large pot with water and bring to a boil
- Add 3 – 4 Tbs Sea Salt
- Cook pasta as directed on package
- Drain, place in a large bowl and add 1/2 cup EVOO, mix well and let cool
- In a large bowl add Onion, Cheese, Olives, Tomatoes, Parsley, Mint, Salt, Pepper, and 2 Tbs EVOO
- Mix well
- Combine the two bowls, mix, taste and add more seasonings to your liking
