Oven Roasted Pumpkin Stuffed With Cheese

Ingredients
- 1 small Pumpkin
- 1 tsp EVOO (extra virgin olive oil)
- 1/4 tsp minced Garlic
- Pinch of Salt
- Pinch of Pepper
- 1 1/2 – 2 cups of mixed crumbled Cheeses (you can use up any leftover cheeses and mix together such as Goat Cheese, Asiago, Fontina, Gorgonzola, or Mozzarella)
- 2 sprigs of fresh Oregano
- 2 sprigs of fresh Thyme
- 2 whole Sage Leaves
Instructions
- Preheat oven to 400 degrees
- Wash Pumpkin and cut of approximately 3/4 of an inch off of the top (see picture)
- Remove Seeds (keep some of the seeds for roasting to use as garnish)
- Brush inside of Pumpkin with EVOO and Garlic
- Sprinkle inside of Pumpkin with Salt and Pepper
- Fill the inside of Pumpkin with Cheeses
- Set herbs on top and place lid back on
- Rub a little EVOO on outside of Pumpkin and place on parchment lined baking sheet
- Place some of the Pumpkin seeds in pan to roast as well
- Roast 40-50 minutes
- Place Pumpkin on a platter, remove lid, and stir Cheese
- Place roasted Pumpkin Seeds along side Pumpkin on platter for garnish
- Serve with large Croutons or Crostini Bread for dipping
