Red Beet Hummus

Ingredients

Instructions

  1. Fill medium saucepan with water, add Beets and bring to a boil
  2. Cook Beets until soft, about 30-40 minutes
  3. Remove Beets from water and let cool
  4. In a high speed blender or food processor add Beets, Mint, Garlic, Sesame Seeds, Lemon Juice, Salt, Pepper, Cumin, and EVOO
  5. Pulse or blend for about 30 seconds, stopping in between to scrape down sides
  6. Blend until it’s a velvety smooth texture
  7. Add more Sesame Seeds and chopped Mint for garnish if desired

Notes

Additional serving suggestion: In the pictures we paired the Beet Hummus with Matza Flat Bread Gluten Free Crackers, Fresh Ricotta, Raw Walnuts, and a drizzle of White Truffle Glaze.
