Stuffed Turkey Tenderloin

  1. Preheat oven to 350 degrees
  2. Butterfly Turkey Tenderloin and pound flat
  3. Add Spinach, Walnuts, Salt, Pepper, and Gorgonzola Cheese to the Tenderloin
  4. Carefully roll up the Tenderloin keeping stuffing inside
  5. Place 3-4 toothpicks in the Tenderloin to keep it sealed
  6. Add Flour to a large plate and roll Turkey Tenderloin in it coating all sides
  7. In a large frying pan add EVOO and heat over med/high heat
  8. When oil is hot, add Turkey Tenderloin and cook 2-3 minutes, turning it over to brown all sides
  9. Blush with White Wine until evaporated
  10. Add Vegetable Stock and remove from heat
  11. Place the Turkey Tenderloin in a large glass baking dish and pour in remaining Vegetable Stock from the pan and place in the oven
  12. Bake 20 minutes until Turkey is cooked all the way through
