This Mediterranean Bow Tie Pasta Salad is super easy to make and loaded with flavor. This is definitely a crowd favorite!

This Mediterranean Bow Tie Pasta Salad is super easy to make and loaded with flavor. This is definitely a crowd favorite!

In Italian this kind of pasta is called Farfalle, which means butterfly. I wanted to call this a Mediterranean Butterfly Pasta Salad, but I thought that might confuse people too much. 🙂

The brand of pasta I used for this dish is from I Love Italia, I absolutely love their pasta!

This particular pasta has four flavors:

  • Turmeric which is yellow
  • Spinach which is green
  • Red Beet which is red of course
  • and Wheat Flour which is white

This is such a colorful, summery pasta salad. It’s refreshing and full of so many flavors, it reminds me of a Greek islands trip…

Mediterranean Bow Tie Pasta Salad

Ingredients

  • 500 grams Bow Tie Pasta
  • 3 – 4 Tbs Sea Salt (for the water the pasta cooks in)
  • 1 medium Red Onion julienned
  • 200 grams Feta Cheese, diced or crumbled
  • 1 cup pitted Kalamata Olives
  • 1 cup halved Grape Tomatoes
  • 1/2 cup chopped fresh Italian Parsley
  • 1/2 cup chopped fresh Mint
  • 2 Tbs + 1/2 cup (divided) EVOO (extra virgin olive oil)
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Fill a large pot with water and bring to a boil
  2. Add 3 – 4 Tbs Sea Salt
  3. Cook pasta as directed on package
  4. Drain, place in a large bowl and add 1/2 cup EVOO, mix well and let cool
  5. In a large bowl add Onion, Cheese, Olives, Tomatoes, Parsley, Mint, Salt, Pepper, and 2 Tbs EVOO
  6. Mix well
  7. Combine the two bowls, mix, taste and add more seasonings to your liking
  8. Enjoy!
