Zucchini Frittata Burger

Instructions

  1. In a medium non-stick pan add EVOO and heat over medium heat
  2. Add Onion, sauté 1-2 minutes until translucent
  3. Add Zucchini, pinch of Salt and Pepper, sauté 1-2 minutes
  4. Whisk the Eggs together and add to the pan
  5. Cook until the Eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan
  6. When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely
  7. Place the Frittata on a plate and with a ring mold cut out circles to make a burger shape
  8. Add the Pancetta to the frying pan a sear for a few minutes on each side
  9. In a small food processor blend the Sun-Dried Tomatoes until it has a paste like consistency
  10. Spread the Sun-Dried Tomato paste onto the bun
  11. Add Frittata circles, Pancetta, Avocado, Tomato, and Arugula onto bun
  12. Buon Appetito!
