Velvety Broccoli and Goat Cheese Soup

Instructions

  1. Heat a medium saucepan over medium heat and add EVOO
  2. Once warm, add Onion and Carrots sauté 1-2 minutes
  3. Add Garlic, sauté 1 minute
  4. Add Broccoli, sauté 2 minutes
  5. Add Salt, Pepper, and Seasoning
  6. Add in Broth and simmer for about 25 minutes
  7. 5 minutes before the soup is done add Goat Cheese stirring constantly until melted
  8. Turn off and carefully transfer the soup to a food processor, or if you have an immersion blender you can leave the soup in the pot and blend until smooth and velvety
  9. Add soup to bowls
  10. Place a slice of crostini with goat cheese on top of it into each soup bowl
  11. Top with Alfalfa Sprouts
  12. Serve immediately
