Calamarata with Fresh Salmon and Peas in a Light Vodka Pink Sauce

Ingredients
- 250 grams Calamarata Pasta
- 4 Tbs finely chopped Shallots divided
- 6 oz fresh Salmon skinned and diced into 1 inch pieces
- 4 Tbs EVOO divided
- 1/2 cup Peas
- 1 clove Garlic
- Pinch of Salt/Pepper
- 1/3 cup Water
- 1 cup Crushed Tomatoes
- 1/4 cup top shelf Vodka
- 3/4 cup Heavy Cream
- 2 Tbs chopped Parsley divided
Instructions
- Cook pasta as directed on package
- While pasta is cooking prepare the sauce
- In a medium frying pan add 2 Tbs EVOO and heat over medium heat
- Add 2 Tbs Shallots and Garlic, sauté 1 minute
- Add Peas, sauté 1 minute
- Add 1/3 cup Water, cook 5-6 minutes
- Add 1 Tbs Parsley, remove from heat and set aside
- In a separate frying pan add 2 Tbs EVOO and heat over medium heat
- Add Shallots, sauté 1 minute
- Add Salmon, turn heat to high
- Add pinch of Salt and Pepper, saute 2-3 minutes
- Add Vodka and sauté 1-2 minutes
- Add Crushed Tomatoes and Peas
- Turn heat down to medium and simmer 5-6 minutes
- Add Cream, heat 1-2 minutes
- Taste and adjust with Salt and Pepper to your liking
- Add 1 Tbs Parsley
- Combine contents from both frying pans and cooked pasta
- Toss and serve immediately
