Gluten Free Gnocchi with Baccala’ Alla Romana (Gnocchi with Cod Roman Style)

  1. Soak Raisins in 1/4 cup water for 20 minutes
  2. Add EVOO to a large frying pan and heat over medium heat
  3. When oil is warm add Onion and sauté 1 minute
  4. Add Pine Nuts sauté 2-3 minutes
  5. Add Cod, turn heat up to high, sauté 1 minute
  6. Add Wine and cook until evaporated (about 1-2 minutes)
  7. Add Tomatoes, Raisins, Strained Tomatoes, Salt, and Pepper
  8. Sauté 5-6 minutes, if liquid starts to evaporate add in some of the water the raisins were soaking in
  9. Cook Gnocchi as directed, drain and add to the sauce
  10. Sauté 1 minute
  11. Garnish with Basil and serve immediately
  12. Buon Appetito!
