Red Beets “Roche”

Instructions

  1. Add Beets and a pinch of Salt to a medium saucepan and cover with water
  2. Simmer over medium heat for approximately 30-45 minutes until Beets are tender
  3. In a small bowl add Goat Cheese, Mint, 1/2 cup Walnuts, and mix
  4. Once Beets are cooked, cool them down under cold water, this will help remove the skins from the Beets as well
  5. Make sure all skin from the Beets have been removed, and chop Beets
  6. Add Beets, Goat Cheese mixture, Salt, Pepper, to a food processor and blend until smooth
  7. With a spoon or small ice cream scoop, grab the mix and form into little balls
  8. Roll the balls into the rest of the crumbled Walnuts to coat and give it a “Roche” effect
  9. Place on a platter and garnish with Mint Leaves
