Velvety Carrot Ginger and Mint Soup

Ingredients

Instructions

  1. In medium saucepan heat EVOO over medium heat
  2. When oil is hot, add Onion and saute 2-3 minutes until golden
  3. Add Garlic and saute 1 minute
  4. Add Carrots and saute 2-3 minutes
  5. Add Ginger and saute 2-3 minutes
  6. Add Vegetable Broth
  7. Add 1 Tbs of Salt to start with and taste at the end, add more if needed
  8. Add Oregano
  9. Simmer over medium heat
  10. Cook approximately 20 minutes or until veggies have softened
  11. Remove Oregano and discard
  12. Add Mint
  13. Remove from heat and blend for 30 seconds until smooth and creamy with an immersion blender
  14. Ladle soup into bowls and garnish with crumbled Amaretti Almond Cookies
  15. Serve immediately

Notes

If you don’t have an immersion blender, carefully add contents of soup to a blender and blend on high for 30 seconds until smooth and creamy.
