Yellow Squash and Zucchini Carpaccio

Instructions

  1. Place 6 slices each of Yellow Squash and Zucchini on a large plate, alternating each color
  2. Add a handful of Sprouts to the center
  3. Add Capers and Sun-Dried Tomatoes around the Squash
  4. Add Lemon Juice, EVOO, Mint, Basil, Salt, and Pepper to a food processor and blend 30 seconds until it has a dressing consistency
  5. Drizzle dressing over Squash
  6. Top with shaved Pecorino Toscano D.O.P.
  7. Serve immediately
