I have made this dish several times using rice. So today I decided to try something a bit different and use Maccheroncini pasta in place of the rice.
The result? 100% Orgasmik to the palate!
Every single bit is bursting with so much flavor!
The sauce itself is incredibly simple, relying on a base of cannellini beans, cherry tomatoes, kale, and onion for flavor and texture. Next comes the shrimp which is sautéed with garlic, salt, crushed red pepper flakes, and white wine. Blending this all together into the Maccheroncini is absolute perfection!

Maccheroncini With Shrimp Ragout Kale And Cannellini Sauce

Ingredients
- 4 Tbs EVOO divided (extra virgin olive oil)
- 8 large Shrimp peeled, deveined, and chopped
- 1/2 tsp chopped Garlic
- Pinch of Crushed Red Pepper
- 2-3 Tbs Dry White Wine
- 1/2 medium Yellow Onion Julienned
- 1/2 cup Cannellini Beans
- 1 handful of Kale leaves coarsely chopped (thick stems removed)
- 6 Cherry Tomatoes halved
- 2 Tbs Strained Tomatoes
- 3-4 Basil leaves chopped
- 3 Tbs Salt divided
- 1 tsp Pepper
- 3 cups uncooked Maccheroncini Pasta (you can substitute with rigatoni or penne rigate)
Instructions
- For the Shrimp:
- In medium saucepan add 2 Tbs EVOO and heat over med heat
- When oil is warm add Garlic and sauté for 1 minute
- Add Crushed Red Pepper and sauté for about 1 minute
- Add Shrimp sauté 1 minute
- Add White Wine and cook 1-2 minutes
- Add a pinch of Salt
- Remove from heat and set aside
- For the Sauce:
- In medium saucepan add 2 Tbs EVOO and heat over med heat
- When oil is warm add in Onion and sauté 2-3 minutes until softened
- Add Cannellini Beans, 1 Tbs Salt, and Pepper
- While Beans are sautéing add 1 cup hot water
- After a few minutes of cooking, mash part of the Beans with a fork, and add more water if it starts to get dry
- Add Cherry Tomatoes, Kale, and Shrimp
- Taste and add in more Salt and Pepper to your liking
- Add more liquid and cook for about 5 minutes on med-high heat stirring constantly
- For the Pasta
- In large pot fill half with water bring to a boil, add 2 Tbs Salt
- Add Pasta and cook according to instructions on box, or until al dente
- Drain leaving a little bit of water and add it to the sauce along with the pasta
- Drizzle a bit more EVOO to emulsion all
- Mix and serve immediately
Notes
Depending on skill level, while the pasta is cooking, you can prepare the sauce to save time.
