They say opposites attract… in this case I’m referring to food. 🙂

The flavors of the Shrimp combined with Portobello Mushrooms and seasonings all embrace each other beautifully creating a perfect symphony of flavors!

Calamarata Terra E Mare

Ingredients

  • 200 grams Calamarata
  • 18 medium peeled and deveined Shrimp
  • 2 cups Portobello Mushrooms sliced
  • 1 cup chopped Arugula (save a little for garnish at the end)
  • 280 grams Cherry Tomatoes
  • 3 cloves chopped Garlic divided (2 cloves for the shrimp and 1 clove for the tomatoes)
  • 1/4 medium Onion Julienned
  • 1/4 tsp Crushed Red Chili Pepper Flakes
  • 8 Tbs EVOO divided (4 for the shrimp and 4 for the tomatoes
  • 1/2 cup Dry White Wine
  • Handful chopped Parsley
  • Salt and Pepper to taste

Instructions

  1. Cook pasta as directed or until al dente and prepare the sauces while it’s cooking
  2. Heat medium pan with 4 Tbs EVOO
  3. Add Onion and sauté 2-3 min
  4. Add 1 clove chopped Garlic and sauté 1 min
  5. Add Tomato, Salt, and Pepper, turn heat to high and sauté 4-5 min
  6. Add a bit of the boiling pasta water to create a bit of a sauce
  7. Add half of the chopped Arugula
  8. Remove from heat and set aside
  9. In a large pan add 4 Tbs EVOO and heat over medium heat
  10. Add 2 cloves of the chopped Garlic and sauté 1-2 min
  11. Add Chili Pepper Flakes, Shrimp, Mushrooms, and turn heat to high
  12. Add pinch of Salt and sauté 1-2 min
  13. Blush with White Wine
  14. Once Wine has evaporated remove from heat
  15. Add Tomato sauce mixture to combine
  16. Drain pasta saving some of the pasta water
  17. Add pasta to sauce, a bit of pasta water to create desired sauce texture
  18. Drizzle a litte EVOO over pasta
  19. Mix in remaining Arugula
  20. Serve immediately
  21. Buon Appetito!
