Ever find yourself craving something sweet but not too sweet come the middle of the afternoon? Possibly chocolate but healthy?This happens to me to me recently and so working with the ingredients I had in my pantry, I created these raw vegan hazelnut cocoa truffles coated with extra hazelnuts and sprouted cocoa quinoa and granola crumbled. It was simply Orgasmik to my palate….hope the same for yours!
Ingredients : ( 8 Truffles)
1/2 Cup Hazelnuts
1 Cup Organic Cocoa Powder
1/3 Cup Agave
1/2 Avocado or 1 Tbsp. Coconut Oil
2 Tsp. Vegan Butter
1/3 Cup Hazelnuts (for the coating )
1/2 Cup Sprouted Cocoa Quinoa Granola
Method :
- In a food processor, place the 1/2 cup of hazelnuts and crumble it very fine. Add the cocoa, the agave, the avocado or coconut oil. Then grind it all at high speed. Taste it and see if is sweet/bitter enough to your personal taste. Add extra agave if needed. Add the vegan butter to obtain a smooth solid dough.
- Remove the mixture from the food processor and transfer it in a bowl. Take the rest of the hazelnuts and the sprouted cocoa quinoa granola and put it in the food processor. Pulse it a couple of seconds, not too long to avoid a powder mix.
- With an ice cream scoop, make 8 balls and roll them into the hazelnuts + sprouted cocoa quinoa granola mix making sure the surface is complete coated. Now they are ready to eat.
