I love making Frittata’s on Sunday for brunch, it’s just so comforting on this lovely lazy day.
But sometimes I also crave breakfast foods for dinner during the week… so I decided to create a Zucchini Frittata Burger! You could eat this for breakfast, brunch, lunch, or dinner… Frittata’s all day everyday I say! 🙂

Zucchini Frittata Burger

- Total Time: 20 minutes

Ingredients
- 2 Tbs EVOO (extra virgin olive oil)
- 3 Eggs
- 1/4 of an Onion julienned
- 1/2 of a Zucchini diced
- 2 slices of Tomatoes
- 2 slices of Pancetta
- 1/2 an Avocado sliced
- 1/2 cup Oven Roasted Sun-Dried Tomatoes
- 1/2 cup Arugula
- Pinch of Salt
- Pinch of Pepper
- 1 Bun
Instructions
- In a medium non-stick pan add EVOO and heat over medium heat
- Add Onion, sauté 1-2 minutes until translucent
- Add Zucchini, pinch of Salt and Pepper, sauté 1-2 minutes
- Whisk the Eggs together and add to the pan
- Cook until the Eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan
- When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely
- Place the Frittata on a plate and with a ring mold cut out circles to make a burger shape
- Add the Pancetta to the frying pan a sear for a few minutes on each side
- In a small food processor blend the Sun-Dried Tomatoes until it has a paste like consistency
- Spread the Sun-Dried Tomato paste onto the bun
- Add Frittata circles, Pancetta, Avocado, Tomato, and Arugula onto bun
- Buon Appetito!
