This my friends is my own rendition of Eggplant Parmigiana converted into a pasta dish!
It’s simply delicious and super tasty with the combination of thinly sliced fried eggplant chips along with the salsa di pomodoro, parmesan cheese, and freshly diced mozzarella.
Everything embraces together for a beautiful sticky dance! 🙂

Fusilli Lunghi Con Melanzana Alla Parmigiana (Long Fusilli with Eggplant Parmigiana style sauce)

Ingredients
- 250 grams long Fusilli
- 1 Eggplant
- 2 Tbs EVOO
- 2 cloves finely chopped Garlic
- 500 grams Crushed Tomatoes
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 cup grated Grana Padano
- 1 cup chopped fresh Mozzarella
- 4 Basil leaves
- Blended Cooking Oil for frying eggplant
Instructions
- Slice Eggplant into 1/2 in thick pieces
- Heat oil in deep fryer to 375 degrees
- Add Eggplant to deep fryer and fry until it’s golden and crispy
- Place on paper towels to drain and set aside
- In a large frying pan add EVOO and heat over med heat
- Add Garlic and sauté 1 minute
- Add Tomatoes, Salt, and Pepper
- Simmer 15 minutes (if it starts to get too dry add a little bit of water)
- While sauce is simmering, cook pasta as directed on package or until al dente
- Drain and add pasta to a large bowl
- Add in sauce, Cheeses, and Eggplant
- Mix until all is melted and blended together
- Garnish with Basil and serve
