This Tri Color Quinoa Tower can be made as an appetizer or main dish. Flavored with Arugula/Almond Pesto, Yellow & Orange Bell Pepper Sauce, this is sure to please any crowd!

It’s one of my favorite recipes to make so far.
This is delicious and super tasty with a melody of flavors. The taste almost reminds me of summer… it’s so light and refreshing!

Tri Color Quinoa Tower

Ingredients
- 1 cup uncooked Organic Tri Color Quinoa
- 1 small Yellow Onion
- 1 medium Carrot
- 2 Celery stalks
- Pinch of Salt
- Pinch of Pepper
- 5 Tbs EVOO divided
- 2 cups Arugula
- 1/2 cup Almonds halved
- 1/2 Garlic clove
- 3 Yellow Baby Bell Peppers seeds and stems removed
- 3 Red Baby Bell Peppers seeds and stems removed
- Handful of Sprouts
Instructions
- Cook Quinoa as directed on package and let cool
- Add Onion, Carrot, and Celery to a food processor and blend finely
- Add mixture to cooked and cooled Quinoa
- Rinse food processor, add Almonds, Garlic and blend finely
- Add Arugula, 3 TBS EVOO, pinch of Salt and Pepper, blend until velvety smooth in texture
- Transfer pesto to a bowl and set aside
- Rinse food processor, add Yellow Peppers, Pinch of Salt, and 1 Tbs EVOO, blend until velvety smooth
- Transfer to a small bowl and set aside
- Repeat this step for the Red Peppers
- Divide Quinoa into 3 parts
- Add Pesto to 1 part of the Quinoa and mix well (save a little bit of sauce to drizzle around plate for garnish)
- Add Yellow Pepper sauce to 2nd part of Quinoa and mix well (save a little bit of sauce to drizzle around plate for garnish)
- Add Red Pepper sauce to 3rd part of Quinoa and mix well (save a little bit of sauce to drizzle around plate for garnish)
- Layer each part of Quinoa in a mold (tupperware works well for this) and press well
- Place mold down onto plate and gently remove, creating a Tri Color Quinoa tower
- Garnish with a little Arugula and drizzle the rest of the 3 sauces around the Quinoa
- Top the Quinoa tower with Sprouts
Notes
Serving size is 2 for a meal, or 4 for an appetizer.
