Arugula Pear Pecorino & Caramelized Walnuts Salad

I’m still sticking to my New Years cleanse and trying to replenish my diet by incorporating a salad daily, but definitely no basic boring salad. This Arugula Pear Pecorino & Caramelized Walnuts salad definitely fits the bill for flavor and satisfaction.

Ingredients: (2 servings)

6 Cups Arugula

2 Pear Bartlett sliced or diced

1 1/2 Cup Pecorino Romano DOP Shaved

1 Cup Walnuts halved

4 Tbs. White Truffle Balsamic Glaze (If you can’t find it substitute with a basic Balsamic Glaze)

Pinch Salt

Pinch Pepper (optional)

4 Tbs. Extra Virgin Olive Oil

Method:

  1. In a medium pan set the balsamic glaze. Turn the heat on medium and after a minute add the walnuts and let them caramelize by adding a drizzle of water to avoid them getting burned. Set to the side to cool down.
  2. In a salad bowl, place the arugula and the sliced pear. Season it with salt, pepper and extra virgin olive oil. Mix it all together and then add the walnuts and pecorino cheese. Toss well and serve.
