Velvety Broccoli and Goat Cheese Soup

Ingredients
- 500 grams fresh Broccoli
- 1 small Onion
- 4 cloves minced Garlic
- 3 Tbs EVOO
- 1 small Carrot
- 4 1/2 cups Vegetable Broth
- 1/4 cup Goat Cheese (plus extra to place on top of crostini for garnish)
- 2 tsp Italian Seasoning
- 1 tsp Black Pepper
- 2 tsp Salt
- 2 slices rustic bread toasted to make crostini
- A bit of Alfalfa Sprouts for garnish if desired
Instructions
- Heat a medium saucepan over medium heat and add EVOO
- Once warm, add Onion and Carrots sauté 1-2 minutes
- Add Garlic, sauté 1 minute
- Add Broccoli, sauté 2 minutes
- Add Salt, Pepper, and Seasoning
- Add in Broth and simmer for about 25 minutes
- 5 minutes before the soup is done add Goat Cheese stirring constantly until melted
- Turn off and carefully transfer the soup to a food processor, or if you have an immersion blender you can leave the soup in the pot and blend until smooth and velvety
- Add soup to bowls
- Place a slice of crostini with goat cheese on top of it into each soup bowl
- Top with Alfalfa Sprouts
- Serve immediately
