This Eggplant and Mint Hummus is easy to make and so full of flavor. Serve it with homemade Parmesan Chips for a unique and delicious appetizer that everyone will love!
I love hummus and experimenting different ways to make it.
Today I decided to use a roasted eggplant, along with garlic, chickpeas, lemon juice, sesame seeds, cumin, evoo, salt, and mint.
The mint really gives this eggplant hummus a unique refreshing taste, I think you guys are going to love it!
I made heart shaped parmesan chips for dipping because I like to put in that extra special touch of love when serving to my guests.
You don’t have to make heart shaped chips, you could just do round chips instead. 🙂

Eggplant and Mint Hummus

Ingredients
- 1 large Eggplant
- 4 whole Garlic Cloves
- 1 can Chickpeas drained and rinsed
- 2 Tbs Lemon Juice
- 1 Tbs Water
- 4 Tbs Sesame Seeds (or 3 Tbs Tahini)
- 1/4 tsp Cumin
- 2 Tbs EVOO (extra virgin olive oil)
- 1 tsp Salt
- 16 fresh Mint Leaves
- 1/2 cup shredded Parmesan Cheese
Instructions
- Preheat oven to 400 degrees
- Slice Eggplant in half lengthwise and make 4-5 slits diagonal in each half (see pic)
- Brush the inside of the Eggplant with EVOO and place on a parchment lined baking sheet
- Add Garlic to baking sheet
- Bake 40 minutes
- Let cool
- Scoop out the flesh of the Eggplant and add to a food processor (discard skin from Eggplant)
- Add Garlic to food processor and blend 10-20 seconds
- Add Chickpeas, Lemon Juice, Water, Sesame Seeds, Cumin, Salt, and Mint
- Blend until smooth, if hummus is too thick add a bit more water until it reaches your desired consistency
- To make the Parmesan Chips, heat a non-stick frying pan over medium heat
- Add 1-2 Tbs of Parmesan Cheese to the frying pan creating a flat circle (or you can use a heart shaped mold like we did for something a little extra special)
- Cook 1-2 minutes, then quickly but gently flip it over and cook 20-30 seconds more
- Place on a paper towel to drain excess grease
- Repeat until all Parmesan Cheese Chips are made
- Serve with Hummus
Notes
It’s important to use Shredded Parmesan vs. Grated Parmesan. Grated Parmesan gets too crumbly and won’t create a proper shell form.
