I’m still reeling over all the delicious holiday feasts but I’m thinking it’s time to start a cleanse to bring in the new year feeling revitalized, and this refreshing salad (a very popular one in Rome around Christmas time) is the perfect start.
Ingredients: (2 servings)
3 Cups Fennel sliced
2 Orange peeled and rounded sliced
1 Cup Moroccan Olives pitted
1/4 Cup Extra Virgin Olive Oil
1 Tsp. Salt
1 Tsp. Black Pepper
Method:
- On a plate, set the sliced oranges first and then top with fennel and olives.
- Dress it with salt, pepper and extra virgin olive oil. Fast and easy!
